Savoury Blueberry Scroll Biscuits by BC Blueberries

 
 

I wanted to give one of the recipes from BC Blueberry a try. Now that we are in the midst of frozen BC Blueberry season, which runs from September until the following June. As someone who doesn’t do much baking, the savoury blueberry scroll biscuits recipe was easy to follow and execute.


What you’ll need:

Ingredients:

  • 1 sheet (225g) Puff Pastry, thawed (keep cold)

  • 2 tbsp (15g) All purpose unbleached flour

  • 2 tbsp (30ml) Roasted garlic, cooled and mashed into a paste

  • 6 slices (75g) Prosciutto or Serrano ham- thin slices

  • 1 cup (70g) Asiago cheese, grated

  • ¾ cup (110g) B.C. Blueberries, fresh or frozen
    (do not thaw if using frozen)

  • 1 tbsp (15ml) Lemon zest, finely grated

  • 2 tsp (10ml) Fresh rosemary, finely chopped
    (or substitute for 1 tsp. dry)

I picked up all of these ingredients from Save-On Foods. The Western Family brand labels clearly identify if it’s BC Grown!


Step 1: Roast Garlic

Peel the papery shell frm the garlic, and cut off the top to expose all the cloves. Rub with olive oil, salt and pepper. I didn’t have any parchment paper to line the garlic in but that would help with the garlic burning and sticking to the edges. I roasted it in the oven at 400F for 1 hr.


Step 2 Weigh out ingredients:

While the garlic is roasting you can weigh out the other ingredients needed for the recipe.

  • 70 g grated asiago

  • Zest 1 lemon

  • 110 g frozen BC blueberries

  • 2.5 g dried rosemary


Enjoy a snack!

While the garlic is still roasting in the oven enjoy a snack! I picked up this premade charcuterie for 2 set from Save-On for $8.99. Blueberries and grapes not included.


Step 3 prepare puff pastry

  • Dust 2 tbsp of flour on a clean surface, roll out cold puff pastry, turning over to coat in flour, into a 14” x 14” sheet

  • Spread the roasted garlic evenly on the cold puff pastry, arrange a single layer of Prosciutto slices, sprinkle evenly with grated cheese, blueberries, rosemary and lemon zest.


Step 4 Roll and cut:

Roll the pastry up like a sushi roll or burrito and cut into twelve 1” discs.


step 5 Bake till golden brown:

Pre-heat oven to 400F. They should be be done in 20-25 minutes.
